Passion Fruit Tomato Beef Soup

🍋🥩 Tangy and refreshing, passion fruit and tomato bring a tropical twist to rich beef bone broth, with tender beef and lime adding a bright, savory finish.

Ingredients

• Beef bone broth – appropriate amount
• Passion fruits – 3
• Tomatoes – 3
• Beef tenderloin (sliced) – appropriate amount
• Lime – 1
• Lemon – a few slices
• Minced garlic & minced ginger – a little
• Fish sauce – to taste
• Fresh cilantro – to taste

Marinating the Beef

• In a bowl, mix sliced beef with:
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp minced garlic
  • A pinch of white pepper
  • 1.5 tbsp cornstarch
  • 1 egg white
• Marinate for about 10 minutes, then coat with a little oil to lock in moisture. Set aside.

Cooking Instructions

1. Scoop out passion fruit pulp and set aside.
2. Score two tomatoes with a cross cut, blanch in hot water to peel; dice one tomato.
3. Heat a pot with a little oil, sauté minced garlic and ginger until fragrant.
4. Add diced tomato and cook over low heat until it breaks down into a sauce.
5. Pour in beef bone broth, add passion fruit pulp, season with salt, a bit of sugar, and fish sauce. Simmer for about 5 minutes to let flavors blend.

🥣 Finishing the Soup

Add marinated beef slices into the simmering broth and cook for about 1 minute until just done. Serve hot, topped with fresh cilantro and lemon slices.
