🍋🥩 Tangy and refreshing, passion fruit and tomato bring a tropical twist to rich beef bone broth, with tender beef and lime adding a bright, savory finish.
Ingredients
- Beef bone broth – appropriate amount
- Passion fruits – 3
- Tomatoes – 3
- Beef tenderloin (sliced) – appropriate amount
- Lime – 1
- Lemon – a few slices
- Minced garlic & minced ginger – a little
- Fish sauce – to taste
- Fresh cilantro – to taste
Marinating the Beef
- In a bowl, mix sliced beef with:
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tbsp minced garlic
- A pinch of white pepper
- 1.5 tbsp cornstarch
- 1 egg white
- Marinate for about 10 minutes, then coat with a little oil to lock in moisture. Set aside.
Cooking Instructions
- Scoop out passion fruit pulp and set aside.
- Score two tomatoes with a cross cut, blanch in hot water to peel; dice one tomato.
- Heat a pot with a little oil, sauté minced garlic and ginger until fragrant.
- Add diced tomato and cook over low heat until it breaks down into a sauce.
- Pour in beef bone broth, add passion fruit pulp, season with salt, a bit of sugar, and fish sauce. Simmer for about 5 minutes to let flavors blend.
🥣 Finishing the Soup
Add marinated beef slices into the simmering broth and cook for about 1 minute until just done. Serve hot, topped with fresh cilantro and lemon slices.
