Ingredients

Pork ribs: About 300g, cut into sections
Bitter melon: 1 piece, deseeded and cut into large pieces
Ginger: 1 piece, sliced
Red dates: 4-5 pieces
Green onion: 1 stalk, cut into sections
Garlic: 4 cloves, crushed
Beef Bone Broth: 1 pack

Seasonings:

Salt
Cooking rice wine

Cooking Instructions

Remove the seeds from the bitter melon and cut it into large pieces. Blanch it in boiling water with 1 tablespoon of salt for 1 minute, then remove and set aside.
- Tips: Blanching helps reduce some of the bitterness, and adding salt helps keep the bitter melon green.
Place the pork ribs in cold water, add green onion, ginger, and cooking wine, blanch to remove blood, then drain and set aside.
In a clay pot, add the Beef Bone Broth and an appropriate amount of water, then add the pork ribs, ginger slices, and red dates. Bring to a boil, then simmer over low heat for 20 minutes.
Add the bitter melon pieces and continue simmering over low heat for another 20 minutes to allow the flavors to meld.
Finally, season with salt, sprinkle with chopped green onions, and serve. Enjoy!
